Tonight is the first night of Hanukkah!!! Every year my family has a huge Hanukkah party and my parents make latkes, we eat fried chicken and play dreidel! Sadly I will not be there this year but the tradition of sharing Latkes with you friends is am holding onto!
This recipe is incredibly simple and so delicious for all you Jews and non Jews who want a greasy snack!
– Russet Potatoes
– Yellow Onion
– Salt and Pepper
– 2 eggs
– Vegetable Oil
Step 1: Peel all the potatoes and shred them into a bowl of water! *** once the potatoes are peeled keep them in water***
Step 2: Grate the entire onion in a separate bowl!
Step 3: In another bowl drain out a portion of the potato. Add some onion, one egg and salt and pepper. With your hands mix it all together!
* you want to do this in parts so that the potato does not begin to brown as you are making the latkes.
Step 4: Pour a layer of oil into a large frying pan. Wait to get hot…obviously.
Step 5: From the bowl of mixed potatoes grab a handful and squeeze to drain all the liquid out! Place in the oil!
* if the mixture is still pretty watery add some flour!
Step 6: Flip the latke once the bottom has fried. Place on a paper towel and start layers towels between each batch to soak up all the oil!
ENJOY!!! It is traditional to eat with apple sauce and coming from someone who doesn’t really like apple sauce it is delicious!
